Executive Chef Dan Javier Szwarc

Dan Javier Szwarc's appointment as Executive Chef at Fenix starting 5th May. We are excited by the prospect of change; this includes our focus on breakfast, lunch as well as our dinner menu which is modern Australian, honest, creative, and full of a flavour.

Dan brings with him a wealth of experience from time spent working in some of London's best and most respected dining establishments before migrating to Australia and the kitchens at the Sofitel. He has been at the helm and along side some of Melbourne's most exciting, vibrant and notable kitchens / chefs, including the glory years at Crown Casino's `Number 8', leaving to open Philippe Mouchel's South Yarra `Les Boucheries Parisiennes'. He again paired up with Joe Vargetto (Former Crown Executive Chef) taking over Joe's Little Bourke Street kitchen at `Oyster'. This was home for three years before a move to `The Albert Park' and a more recent tenure at `Live Bait' in the Docklands.

Dan has forged a reputation for his incredibly passionate approach to food; French, Italian & Argentinean trained, his style, technique and love for Australian produce will surely influence the future direction and delivery of food at Fenix. We will continue to offer our Richmond locals a more casual approach to dining with a segment of the menu served entree size to encourage sharing and the ability to sample a wider variety of dynamic dishes and flavours.
